A delicious experiment, indeed. Destemmed Pinot Gris is thrown into 1-ton fermenters, before five gallons of skin-contact Gewürztraminer and Muscat are incorporated to bring about native fermentation. After 7-10 days, the resulting wine is blended with Ovum's standard blend of 'Big Salt' white wine and aged on the lees for at least five months.
The resulting wine is unfiltered, unfined and wonderfully fascinating. Earthy turmeric meets tropical fruit. Soft with a tannic grip.
