Conestabile della Staffa Sangiovese 'CarboEtrusco'

The historic Conestabile della Staffa is being re-born by the work of natural wine genius Danilo Marcucci.  Over 12 hectares of vines, many in disrepair for over a decade, were planted in the early 1970's.  

Made in the unique method of carbonic maceration that dates back to the Etruscan times where they would cover there maceration tanks with a wet, clay-based paste allowing the CO2 to protect the must and preserve the fruit. 

Aromatics of red berries, crushed violets, macerated Morello cherries, and a hint of both ground black and red bell pepper. Silky on the palate up front but finishes with Sangiovese acidity and a good amount of tannins. Put a chill on it and chill on it!
