Often called a winemaking visionary, Raul Perez has had major influence over the birth of what many term the "New Spain", specifically in the region of Castilla y León. Known for his warmth and humility, he is now a mentor to the next generation and his influence is far reaching.  His approach to winemaking can be described in simple terms: he seeks to bottle the unique qualities of each vineyard and soil type. His minimalist approach requires constant exploration into the microbiology of maceration, yeasts, fermentation and more. He moves forward with a constant curiosity and search for how the vineyard can produce the truest expression of itself.
